Simple Dinners = Casserole Dinners

This time of year I am so busy with fitting in all of the kids activities and all of the Holiday preparations that I have nearly all the hours of my day booked. After all, who can work, take care of kids, prep for the holidays, and be sane every day of the week all while having a homemade meal prepared for dinner? If you know someone, let me know, and tell them I need their secrets.

For those of you driving the struggle bus just like me this holiday season I have a simple dinner that will make it easier to have it all together — or at least look as if you have it all together. Cheeseburger ‘n’ Fries Casserole. Yes I said casserole. Today most parents are all about the slow cooker and instant pots, but back in the day our parents and grandparents were all about the casserole. Casserole’s are great because they cook all in one dish, which means minimal clean up, and they are usually all tossed together which means minimal prep.

This Cheeseburger ‘n’ Fries Casserole is very reminiscent of burgers and fries, but it can even fill that chili cheese fry craving. My kids loved this, of course, and so did my husband. It won’t win an award for the healthiest meal you will ever eat, but it tastes good, is warm, filling, and quick on those nights that your main goal is just to avoid the drive-thru. Another bonus is that it is perfect for shelf-cooking. If you are trying to use up things in your pantry and not go shopping. Or if you are planning simple and inexpensive meals on a tight budget week.

This meal is so simple, you do not have to be a chef, or even enjoy cooking. It is a straight up simple meal that will impress without the extra fuss. It is making this momma’s life a little easier this holiday season, which is the best gift ever. Head on over to Taste of Home for the full recipe. It won’t disappoint.

Stocking Stuffers: Socks and Underwear

In my family growing up we always got a set of socks and a set of underwear for Christmas. Growing up with four brothers and myself my parents used holidays as a restock time of year as well as a fun surprise. So we always got a few items we desperately needed, and any parent will tell you when raising kids you always need extra socks and extra underwear.

The Boy’s Store has some incredibly cute socks and underwear available, because after all, just because we need them doesn’t mean they can’t be fun.

Boys Boxer Briefs by Trimfit: These fun and comfortable boxer briefs come in package of four. These just scream comfort, they are tagless, they are contoured to fit, and they are 100% combed cotton. They come in a colorful and assorted set with stripes, bold solids, and football helmets.

Boys’ Cowboys Socks by MP: These cowboy themed socks will rope any young buck’s heart. Available in gray and navy they are perfect for that little western lover.

Boys Spaceman Leg Warmers by Huggalugs: These legwarmers are perfect for that little crawling babe that isn’t ready to walk but needs to be stylish and protect his knees. He will rocket to the moon without ever leaving the family room!

Christmas Cupcakes

Do you have a christmas party coming up soon? We are having a kid-friendly party this year with all of our friends and colleagues. So I wanted to do something for dessert that would excite the kids as well as the adults. I came up with the idea of letting the kids decorate their own christmas cupcakes. I will bake cupcakes ahead of time and buy all sorts of frostings, icings, candies, and sugars to put on top of the cupcakes.

I searched the web this morning to find some fun cupcake ideas to place at the table so that the kids could have some ideas before decorating. I found multiple ideas that will wow everyone.  I cannot wait to see what everyone come sup with. I almost want to have a little contest and let the kids show off their cupcake and let the adults judge the best one.

Cupcakes are such a fun and simple way to express your creativity and showcase your favorite part of the holidays. The possibilities are endless. You can make christmas trees, christmas ornaments, winter themed snowflakes or snowmen, holly, or even Santa Claus.

What are you planning for all of your holiday gatherings? Are you planning an elaborate dessert? Or something more fun and festive like cookies or cupcakes?
