Simple Dinners: Honey Chipotle BBQ Chicken Skewers

I love it when the warmer weather takes over and I can cook outside while the kids play. It makes for such fun and carefree nights with my family. I love to use my barbecue and I try to find any excuse for it, especially since it means a lot less cleanup, and I get to enjoy the weather while I cook instead of being stuck in my kitchen.

When summer hits I try to stock up on easy and delicious BBQ recipes. Because you can get in a rut when it comes to outdoor cooking. But this year I won’t let you. I will try to post a summer outdoor recipe every month. This month you have got to check out these sweet and delicious skewers.

Summer Eats: BBQ Chicken Bacon Pineapple Kabobs

Summer means less work, less school, and less time in the kitchen. We try to stick to food that can be cooked without using the hot oven in the summer. It just adds too much heat to our already hot house. We love to find meals that can be cooked almost entirely outdoors. Our grill gets a LOT of use during the summer months. Which makes the kids happy, since they can play outdoors while Mom and Dad cook. We are happy because it is less cleanup, and our time is spent relaxing and enjoying the beauty of summer outside.

This month I found a fun and simple kabob meal that my family absolutely loves, and I hope yours will too. Kabobs are so simple, fun, and delicious. It breaks up the monotony of burgers, hot dogs, and steak that comes with grilling outdoors. This fun recipe comes from the very fun and delicious blog written by Jessica and Nellie, Butter With a Side of Bread. These ladies know how to create a delicious dish!

I loved this recipe because it allowed me to get the kids involved in prep. They love anything they can poke with a stick. Just be sure to watch them and teach them how to do so without getting hurt. My older kids loved helping. Dad loved it because, well, BACON. I love pineapple so anything that incorporates my favorite summer fruit is always a win.

Summer Eats: Kansas City Barbecue Ribs

Summer is in full bloom. The kids are finally out of school, the weather is hot, and the pool is open. So it isn’t surprising that all of that fantastic summer barbecue food is out on the shelves at the grocery store and begging to be brought home and grilled. We love summer barbecues. Ribs are a HUGE favorite in our house. My husband makes them several times during the summer season. I love to have them with lots of sauce. So I love to baste them after they are grilled, and we even keep some extra sauce on hand for eating. But, we love trying new recipes. So of course when I saw this recipe for Kansas City Barbecue Ribs I knew we had to try it.

What you will need:

  • 1/4 cup packed brown sugar
  • 1 Tbsp. paprika
  • 1-1/2 tsp. each garlic powder and onion powder
  • 1 tsp. black pepper
  • 1/4 tsp. ground red pepper (cayenne)
  • 4 lb. pork spareribs, trimmed
  • 1 cup HEINZ BBQ Sauce Kansas City Sweet & Smoky

What you will do:

  • Heat grill to medium-high heat. Transfer ribs to grill.
  • Heat oven to 350ºF.
  • Combine sugar and seasonings; rub over ribs. Place on a foil-covered rimmed baking sheet sprayed with cooking spray.
  • Bake 1 hour.
  • Heat grill to medium-high heat. Transfer ribs to grill.
  • Grill 8 to 10 min. or until heated through, turning and brushing frequently with barbecue sauce.

Ribs are a great entree for summer barbecues and potlucks, so enjoy them all summer long with friends or at home with family.
