Breakfast on the Run: Peanut Butter Banana White Chocolate Muffins

IMG_0815.PNGMornings have gotten pretty crazy around here. Now that school is back in sessions, everyone has homework that needs to be checked, shoes that need to be found, a special shirt that was supposed to be worn, practice after school so they need extra snacks and all their gear. It can drive a parent mad. We rush around so much in the mornings it sometimes surprises me that we eat at all. In fact, we are so crazed and busy that I sometimes don’t even care if everyone eats, as long as I get my coffee. No coffee no function, and everyone needs a momma that can function! I know I sound like a bad momma for not caring if they eat, I mean it’s not like they starve, they do nothing but eat. But seriously, I do feed my kids. In fact I just found a great new recipe from a fellow busy momma that will certainly save our mornings, and sanity.

Christi from LoveFromTheOven is here to save the day. This busy blogging mom does it all, cook, clean, craft, photograph, you name it she does it! She is even a fantastic baker. Which is great because I need a great new recipe. Her Peanut Butter Banana White Chocolate Muffin recipe sounds so good I actually wonder how it can be a breakfast food. But it is, and it is actually very healthy and will help your little ones start their day right.

This recipe is perfect for breakfast with the protein from the peanut butter, the good fats, the oats, and Greek yogurt it isn’t full of all those bad fats, sugars, and empty nutrients. I love it when something that looks and tastes so decadent is actually good for me, and my kids. So I am very happy and excited to get a large batch of these ready for us to grab and eat on the run. Not only are they good for us, they travel well. So don’t mine me when you pull up next to us at a stop light and you see me shoveling food into my mouth. It may look like I am eating calorie filled empty nutrient muffins, but actually I am scoring one for the team with a great new healthy muffin!

What You Will Need:

1 1/2 Cups White Whole Wheat Flour (all purpose would work as well)
1 cup Oats
3/4 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 large ripe bananas
1 cup vanilla Greek yogurt
1/4 cup milk
1/2 cup peanut butter (or No-Nut Butter if you have nut allergies)
1/2 cup melted butter
2 tablespoons vanilla extract
1 large egg
1/2-1 cup white chocolate chips

Easy Weeknight Meals: Italian Pulled Chicken and Kale Sliders

Crockpot meals are the best, especially on a weeknight when you are super busy and may not be able to make a great meal for your family. This month we want to share a great recipe we found that can be made all at once, or cooked in crockpot of low during the day while you are at work. It’s a delicious meal with some incredibly healthy elements that will surely impress you and your family.

This month the wonderful recipe comes from Mom-on-the-go Roni. A busy working Mom, Roni makes sure her family eats right. After changing her lifestyle a few years ago and losing 70 pounds she set out to help others stay healthy. She began blogging all her fantastic recipes on greenlitebites.com. Now she shares her incredible healthy, and tasty, recipes for other moms-on-the-go! We were so impressed by this incredible meal we had to make it ourselves, and it was a hit! Even the two year old ate it!

As I said, we chose to crock it and therefore added the kale after returning home so it wouldn’t be too soggy. We did everything else as Roni prescribes, and it was a huge hit!

What You Will Need:

1 Batch of Homemade Tomato Sauce
2 Frozen Chicken Breasts
1 cup chopped Kale
2 cups of the tomato sauce listed above
10 Small Whole Wheat buns
5 oz of fancy shredded mozzarella or Mexican Cheese Blend

Easy Weeknight Meals: Crockpot Beef Ribs

Ribs are a huge hit in our house. It doesn’t matter if they are pork or beef, they are great! But they tend to be too involved of a meal to make on a weeknight. Especially during baseball season when we can come home way after 8 looking for something to eat quick and send all the kiddos to bed. But we just can’t help but crave them! So when we found this incredible Crockpot recipe for Beef Ribs we just had to try it out during our week. We thought for sure it would be a difficult meal, bit it was easy-peasy-lemon squeezy!

Don’t worry about having to feed that family of yours on a weeknight, with this new recipe you can have one of your favorite meals without the hassle. You can even leave it on all day while you are out and about doing your errands, at work, and running carpool. Just follow the recipe, pop it in huge crockpot, and get busy with your day.

What You Will Need:

1 package of 8 thick cut ribs (beef or pork work well!)
1 large onion, roughly chopped
salt and pepper
2 1/3 cup BBQ sauce (homemade or good quality bottled sauce of your choice)
Refrigerator (marinating overnight makes this recipe taste even better!)
Crockpot

Crock Pot BBQ Ribs
Family Recipe
Serves: 4
Prep Time: 10 minutes
Cook Time: 6-8 hours

What You Will Do:

1. Begin by roughly chopping your onion and set aside.
2. Season your ribs with salt and pepper. Then spread 1/3 cup of BBQ sauce over the bottom of your crock pot. Lay a single layer of ribs to cover the bottom of your crock pot. Sprinkle with half of your chopped onions and spread 1 cup of BBQ sauce, making sure to evenly coat the ribs.
3. Repeat these steps with a second layer.
4. Then cover your crock pot and cook on low heat for 6-8 hours.

Now when you arrive home you will have a great and tasty meal waiting for you! Yummy!
