Easter Goodies: Bunny Cupcakes

Easter may still be a few weeks away, but it is always nice to plan ahead. I love to bake, especially at the holidays. Recently we have been so busy that if I do not plan ahead I will never have time to accomplish anything, thank you baseball season! So I am looking ahead and planning out my Easter to-do’s now. I have already found egg dying tutorials that both my kids and I are excited to try, I have ideas for Easter Baskets, and I have found the perfect (and simple!) Bunny Cupcakes for Easter Day.

Thank you Pillsbury for making my life simple! I try to bake form scratch on most occasions, but with both kids in baseball and school it makes it that much harder to accomplish everything. Especially since the family is attending a wedding out of town in March. This recipe is easy to follow, allows me to not worry about too many instructions, and it is simple enough the kids can help me out.

  • Step 1 – Prepare cake mix according to package instructions using water, oil and eggs to make 24 cupcakes. Cool completely.
  • Step 2 – Place frosting in large decorating bag fitted with round tip with wide round opening. Pipe a 1 3/4-inch diameter mound of frosting on top of each cupcake.
  • Step 3 – Cut each marshmallow in half diagonally into 2 pieces. Dip cut side of each piece into pink sugar to coat. Place on cupcakes, sugar side up, to resemble ears.
  • Step 4 – Insert one jelly bean into each frosting mound to create noses. Use clean tweezers to place black sprinkles to create eyes.

Once you are done you can enjoy your delicious and adorable looking bunny cupcakes. I know we will!

Goodies come in all shapes and sizes during October. Candy is a huge deal, but have you ever tried cupcakes? Now cupcakes can be difficult to handout to trick-or-treaters, so we are not suggesting that. However, if you plan a Halloween party every year, hand out treats at school, or just enjoy a treat at home with your kids cupcakes are the perfect treat medium.

Lego Party Ideas:

1. Invites are an easy build. Simply gather your son’s favorite colors in construction paper and begin by folding cards, about 5X7 in size. Take the same color construction paper and cut circles about an inch in diameter. Then use some double sided tape to secure them to the front of the card. Then just use your computer or hand print little “Lego” labels over the circles. Now you can tape a print out invite inside the folded paper with your invite info! Voila! Lego invites.

2. Party Favor Bags can be created in a very similar way. Use more of your construction paper circles to create Legos on plain colored gift bags.

3. Decorations are a breeze when you use your imagination, and your printer. Here is a great document that has a Lego font to create a “Happy Birthday” sign. Here are some “Lego Labels” that can be used on napkins and cups, and finally some little “Lego Straw Heads” to place on each straw for an added little Lego decoration. Each child will love picking out their own face for their straw, and it will also help them to know which cup is theirs!

4. Sweet Treats are a must at any birthday party. So of course you have to splurge a little. You can create marshmallow Lego pops with some large and small marshmallows, yellow candy melts, and black royal icing. Simply get a lollipop stick and put a large marshmallow on it, then place a mini marshmallow on top of the large marshmallow. Then dip the whole thing in the melted yellow candy melt. Wait for it to dry then use royal icing to draw face on the Lego heads.

5. Cupcakes are a great alternative to a cake. Simply use your favorite cupcake recipe and frost the cupcake with frosting. Place them in some brightly colored cupcake wrappers which you can find at any craft store, or make your own. Then use some fondant, which is available at all craft stores, and roll out a bright color, use a sharp knife or trimmer to create little square pieces. Then use the fondant to create little balls and place them on top of the square to create a Lego effect.

6. Games are fun and you can never go wrong with a piñata. You can find a great Lego one at the party store or use this great tutorial FromtheFencePost

Now you have an incredible start to the best built party your little many could ever hope for!
