Spooky Cookies: Chocolate Chip Spider Cookies

It is officially October which means that I can officially post Halloween ideas without angering other people. Yes, my favorite holidays are Christmas, Halloween, and Easter. Yes, those holidays last longer than just one month in my house. Yes, I decorate, and yes my Halloween decorations have been up for three weeks already. No, I will not apologize for it. Now that the rest of the world has caught up we can begin celebrating in earnest.

First on the agenda is food. Because food is life, and treats are the best. We do a lot of baking in the fall and winter. It all starts during the Halloween season. My kids and I just did a whole batch of Star Wars Sugar Cookies to share with the kindergarten class. But next on my agenda is Halloween cookies. Since we just did roll out sugar cookies I am not so sure I want to spend my day rolling out, cutting, and decorating again so soon. But I do want some fun Halloween treats on hand. So after doing a little looking, I found something that will be simple to make, be fun, look great, and give me that sweet treat I am looking for.

Lauren from Tastes Better From Scratch has a great and simple recipe that will knock your socks off. Sometimes we make the mistake of trying to impress at holiday time with fantastic out of this world recipes, meals, desserts, and decor. But with so much going on in my life I discovered it is best to do what I enjoy, make myself happy, and just live my best life possible. So I make treats because I want them, and I decorate them because I want something fun to brighten my day. But, I know my limits, and with so much going on right now this fun and simple dessert is right up my alley. So thank you, Lauren, for reminding me that simple is great!

Fall Treats: chocolate Turtle Apple Slices

I love a good fall treat. Candied apples are my FAVORITE. But they can be difficult to perfect, and take a long time to create, and eat. I have been on the lookout for a sweet alternative that didn’t  take as much care to perfect. I stumbled upon this great alternative, turtle apple slices!

The whole apple can be difficult to coat in caramel and chocolate, but the slices are perfect for coating quickly. Bonus, they are easier to eat and won’t be nearly as sugary and calorie filled! It is the perfect little serving of goodness.

This easy to follow recipe (with an awesome video tutorial) is from Mom Loves Baking. Lise at Mom Loves Baking gives excellent how-to videos and written instructions for people like me who just have not been able to perfect the candied apple. It is so easy I am SURE I can do it. I may even let the kids help me.

Easter Goodies: Bunny Cupcakes

Easter may still be a few weeks away, but it is always nice to plan ahead. I love to bake, especially at the holidays. Recently we have been so busy that if I do not plan ahead I will never have time to accomplish anything, thank you baseball season! So I am looking ahead and planning out my Easter to-do’s now. I have already found egg dying tutorials that both my kids and I are excited to try, I have ideas for Easter Baskets, and I have found the perfect (and simple!) Bunny Cupcakes for Easter Day.

Thank you Pillsbury for making my life simple! I try to bake form scratch on most occasions, but with both kids in baseball and school it makes it that much harder to accomplish everything. Especially since the family is attending a wedding out of town in March. This recipe is easy to follow, allows me to not worry about too many instructions, and it is simple enough the kids can help me out.

Bunny cupcakes

INGREDIENTS

  • 1 (15.25 oz.) package Pillsbury™ Funfetti® Premium Cake Mix
  • Additional ingredients to prepare cake mix per package instructions
  • 2 containers Pillsbury™ Creamy Supreme® White Frosting
  • 24 marshmallows
  • Pink decorator sugar
  • 24 miniature jelly beans (select your favorite colors)
  • 48 black sugar pearl sprinkles

PREPARATION DIRECTIONS

  • Step 1 – Prepare cake mix according to package instructions using water, oil and eggs to make 24 cupcakes. Cool completely.
  • Step 2 – Place frosting in large decorating bag fitted with round tip with wide round opening. Pipe a 1 3/4-inch diameter mound of frosting on top of each cupcake.
  • Step 3 – Cut each marshmallow in half diagonally into 2 pieces. Dip cut side of each piece into pink sugar to coat. Place on cupcakes, sugar side up, to resemble ears.
  • Step 4 – Insert one jelly bean into each frosting mound to create noses. Use clean tweezers to place black sprinkles to create eyes.

Once you are done you can enjoy your delicious and adorable looking bunny cupcakes. I know we will!
