Easter Goodies: Bunny Cupcakes

Easter may still be a few weeks away, but it is always nice to plan ahead. I love to bake, especially at the holidays. Recently we have been so busy that if I do not plan ahead I will never have time to accomplish anything, thank you baseball season! So I am looking ahead and planning out my Easter to-do’s now. I have already found egg dying tutorials that both my kids and I are excited to try, I have ideas for Easter Baskets, and I have found the perfect (and simple!) Bunny Cupcakes for Easter Day.

Thank you Pillsbury for making my life simple! I try to bake form scratch on most occasions, but with both kids in baseball and school it makes it that much harder to accomplish everything. Especially since the family is attending a wedding out of town in March. This recipe is easy to follow, allows me to not worry about too many instructions, and it is simple enough the kids can help me out.

Bunny cupcakes

INGREDIENTS

  • 1 (15.25 oz.) package Pillsbury™ Funfetti® Premium Cake Mix
  • Additional ingredients to prepare cake mix per package instructions
  • 2 containers Pillsbury™ Creamy Supreme® White Frosting
  • 24 marshmallows
  • Pink decorator sugar
  • 24 miniature jelly beans (select your favorite colors)
  • 48 black sugar pearl sprinkles

PREPARATION DIRECTIONS

  • Step 1 – Prepare cake mix according to package instructions using water, oil and eggs to make 24 cupcakes. Cool completely.
  • Step 2 – Place frosting in large decorating bag fitted with round tip with wide round opening. Pipe a 1 3/4-inch diameter mound of frosting on top of each cupcake.
  • Step 3 – Cut each marshmallow in half diagonally into 2 pieces. Dip cut side of each piece into pink sugar to coat. Place on cupcakes, sugar side up, to resemble ears.
  • Step 4 – Insert one jelly bean into each frosting mound to create noses. Use clean tweezers to place black sprinkles to create eyes.

Once you are done you can enjoy your delicious and adorable looking bunny cupcakes. I know we will!

Sweet Summer Treats: Campfire Cones

Summer is quickly coming to a close so why not get the whole family together to enjoy the end of it? Spend some time together this weekend outside and enjoy a picnic, swim, play in the yard, have a water fight, host a summer movie night, whatever you do plan to do one last big summer hoopla. Then plan the best summer sweet treat ever: campfire cones. You can get wild and crazy all day long then relax with your family around a bonfire, fire-pit, or even the BBQ and make and enjoy this sweet treat. It has been making the rounds in the blog world, and gained great approval on pinterest, and it looks scrumptious. So this weekend try this simple twist on a great treat.

What You Will Need:

Aluminum foil
Marshmallows
Chocolate chips
Bananas
Strawberries
Waffle cones
BBQ or fire-pit
BBQ tongs

What You Will Do:
1. Prepare the grill or fire-pit.
2. Chop the strawberries and bananas.
3. Then take your waffle cones and roll/wrap them in aluminum foil so the the foil hangs out past the top of the cone so that you can close it later.
4. Begin layering your treats in the cone. Try a layer of strawberries followed by a layer of chocolate chips, then bananas, and marshmallows, repeat.
5. Layer your cone until it is completely full. Then cover the cone with the overlapping foil. Make sure the cones are wrapped tightly.
6. Now place the wrapped cones on the BBQ or on a rack on the fire-pit. Toast them for about 3-5 minutes. Remove with a pair of BBQ tongs, the foil will be very hot. Allow the foil to cool then unwrap your sweet treat and enjoy it!

Now sit under those great summer stars and try to enjoy those last great moments of summer with your family. Before you know it school will be back in session!

Fun Dessert: Mini Watermelons

Mini Watermelons

It is always fun to try a great new dessert, especially with your kids. Kids love dessert, and let’s face it dessert can be a little to decadent for this little growing bodies. But there are ways to make sweet desserts but still remain on the healthier and lighter side. This delicious dessert idea is both sweet and light, and best of all, they are really fun and cute to make!

Next time you plan a fun event or just need something sweet for dessert on a Friday night with the family try these fantastic mini watermelons. These mini watermelons are made out of jello for a sweet yet light and cool taste, perfect for spring and summer nights.

What you will need:

  • 1 box of strawberry flavored gelatin
  • 1 cup boiling water
  • 5 limes halved with the flesh spooned out and discarded
  • 1/2 cup mini chocolate chips

What you will do:

1. In a bowl, add the boiling water to the gelatin and stir until the gelatin is fully dissolved. Spoon into the lime rind halves. Refrigerate until cool. Add chocolate chips as seeds. Put back in refrigerator until firm.

2. Carefully halve the gelatin-filled lime rinds again. Serve for a delicious and fun mini treat!

Your kids will love these sweet mini treats. Let them have fun and play with their food for once. Take turns holding your mini watermelon and making giant voices and pretend you are living at the top of Jack’s beanstalk. Fee fi fo fum your way through dessert and have a grand ol time!
