Easy Weeknight Meals: Flu Fighting Chicken Soup

The fall and winter seasons are so beautiful, crisp, cool, and entertaining. However, they also bring colds, flu’s, and lots of germs from school. So of course it isn’t surprising that so many of our kids end up brining home little germs all season long. No matter what you do those germs seem to creep in. Antibacterial wipes, soaps, sanitizers, hand washing, it just cannot stop them. We cannot promise the germs will go away, but we can promise to help you battle them with some fabulous hot soup that will make you and your family feel better soon.

Flu Fighting Chicken Soup

What You Will Need:

  • 1 pound skinless, boneless chicken breast tenders
  • 4 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried oregano
  • 3/4 teaspoon salt
  • 3/4 teaspoon ground black pepper
  • 3 large carrots, peeled and diced
  • 3 stalks celery, diced
  • 1 very large onion, finely diced
  • 8 cloves garlic, minced
  • Big pinch of salt
  • (1) 32 oz containers chicken stock
  • 4 cups water
  • 1 bay leaf
  • 2 cups noodles of your choice, I used gluten free elbows
  • Juice of 1 lemon, plus more for serving
  • 1/4 cup to 1/2 cup fresh dill, chopped

Easy Weeknight Meals: One Pot a Chili Mac

It’s that time of the year again when life is going by so fast we cannot seem to slow down. With everyone back at work and back at school it can be difficult to have the time to get everything done that needs to be done. Which can mean that dinner can begin to fall by the wayside. We don’t want that to happen, so we are here to help you every month find at least one new recipe that will make your family say, what’s for dinner and not respond with a frown or sigh.

This month we have found a fun and fall-friendly recipe from an incredibly fun blog Nums the Word. Nums the Word is written by friends Janelle and Jodie, both moms and wives with busy chaotic lives. These two great women love to share their tasty recipes with moms all over the world. Now you can share their fun fall-friendly one-pot chili Mac with your family.

One Pot a Chili Mac

What You Will Need: 

  • 1 Pound of Ground Beef
  • 1 medium onion, diced
  • 2 Tablespoons of garlic or garlic paste
  • 2 cans chicken broth
  • 1 (14.5 ounce) can diced tomatoes
  • 1/2 can (14.5 ounce) white kidney beans, drained and rinsed
  • 1/2 can (14.5 ounce) kidney beans, drained and rinsed
  • 2 teaspoons chili powder
  • 1 1/2 teaspoon cumin
  • 1/2 teaspoon season salt
  • 1/4 teaspoon ground pepper
  • 10 ounces uncooked elbow pasta noodles
  • 2 cups sharp cheddar cheese, shredded

Easy Weeknight Meals: Pepperoni and Sausage Pasta Bake

We have found another excellent weeknight meal that is simple and quick yet tastes delicious! School is going to start again soon, and many of you have children finishing up the Ned of their summer breaks. So of course we want to stretch out all that extra time out of the house and out of the kitchen. This simple meal is perfect for adding a little extra time to your day, instead of to your time in the kitchen.

Pepperoni and Sausage Pasta Bake

What You Will Need:

  • 1 cup sausage, browned and drained
  • ½ cup pepperoni slices
  • 1 (14.5 oz) can Basil, Garlic, and Oregano diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 2 cups penne pasta
  • 2 cups water
  • ½ cup shredded Mozzarella or Italian-blend cheese
  • extra pepperoni for topping

Pepperonie and Sausage pasta

What You Will Do:

1. Add sausage, pepperoni, diced tomatoes, tomato sauce, pasta and water to a large, 12-inch skillet. Stir to combine.

2. Bring to a boil, then cover and reduce heat to medium to medium-low, and simmer for 15 minutes until the liquid is mostly absorbed.

3. Top evenly with cheese and extra pepperoni slices. Broil until the cheese is browned and bubbly, about 3 minutes.

Makes: 4 servings.
