Fast Fall Food: Chicken Enchilada Pie

I love Mexican food. It is delicious, it is usually fairly easy to put together, and it freezes well which means I can make extra and freeze it for later. Fall is always a fast-paced season for us. With two parents that work in Education, and two kids in full-time school, extracurricular activities, and parents that coach said activities we spend a lot of time in the car or running around. We do not always have time to get dinner ready. Since we have food allergies it means we cannot just jump in the car and hit up the drive thru. So instead we try to have meals planned ahead of time.

Meals like Eat Your Hartt Out’s Chicken Enchilada Pie make it simple for us. We can swap ingredients for our allergies, and we can still have a delicious homemade meal. This recipe is great because you can swap the tortillas for carb-smart, corn, or flour tortillas to suit your family. Apple Pie Muffins: Fall Foods!

I love to bake!! Fall brings out my need to bake, there is something about the cooler weather that always makes me want comfort food. I especially like to cook with fall ingredients so I love to find anything I can bake with apples and pumpkin, like these apple pie muffins. Lucky for me we live near apple country so I have access to lovely fresh-picked apples right from the farm. We love taking the kids and enjoying a great day at the apple farm running around picking apples, laughing, and chatting with the kids. We have dinner at a restaurant in the town and we make it a slow-going enjoyable fall day. When we come home we like to find ways to use the apples. We, of course, enjoy some in lunches and as snacks but we also cook a lot of them that weekend and can them for future use. I prep them for pies, and we make muffins. I really love this Apple Pie Muffins recipe. My kids enjoy eating them for breakfast, as a snack in their lunches, or as an afternoon snack. What I love best about the recipe is that I can alter it if I need too. We like to eat things with less sugar, so we substitute  half of the sugar with applesauce (which also gives it a moister/more apple taste!) Slow Cooker Buffalo Wings: Fast Fall Food

Fall is a busy time in this household, so we can only imagine it must be the same in your household. Between soccer practice, soccer games, school, work, and after school activities. Add to that our normal errands and routines we get bogged down rather quickly in our house. It also happens to be football season, and my family loves to sit on Sunday and eat great food while watching the games. Unfortunately I like to watch the games too, which means I don’t like to be stuck in the kitchen. That is why I was so excited to find this fast and easy fall recipe from The Shabby Creek Cottage.
