Simple Dinners: Lasagna Roll Ups

We love lasagna, we have Celiac’s Disease in our family and have someone who has to eat gluten-free at all times, but we LOVE Lasagna. There are some incredible gluten-free pastas, but it can be hard to put together a full lasagna on a busy night. We have discovered the fun of lasagna roll-ups for those busy nights.

One of the other great benefits of the lasagna roll-up for us is that gluten free noodles can be expensive, and they frequently come in smaller portion sizes meaning you have to buy twice as many to feed large numbers of people, or else make multiple meals. We hate having to do that. So the idea of lasagna roll ups is genius in our case because you use have the amount of lasagne noodles making the roll-ups than you would to make a whole lasagna. Which means we can get away with buying less and spending less.
