Summer Meals: Jerk Chicken

We love a good international meal. We like to introduce our kids to new cuisines, whether we are travelling or at home we try to include one new meal a week. We feel it is important to not only understand and experience your own culture but other cultures as well. While some may say the international language is math, we all know it is really food. After all, we all have to eat, we all want to eat something that tastes good, and every culture makes their own types of food. Food is the language of love, and it is the easiest way to experience a culture.

This summer we wanted to go to the Caribbean. That didn’t happen, but if we can’t go to the Caribbean we will bring the Caribbean to us. Jerk Chicken is one of the bets dishes from Jamaica. it is simple to make, and it is delicious. Why not bring a little of the Caribbean home this summer?

This great recipe comes from Delish. It is perfect for summer because we can marinate it the night before and leave it to marinate in the fridge while we are at work or out enjoying our summer. Then we simply come home and grill it. We love to pair it with rice but you can pair it with anything you want.

Easy Meals: Pad Thai

We love international cuisine n our house. We love getting to go out to eat Chinese food, Thai food, Sushi, and Korean food. But that can get expensive, especially when you are buying food for 5 or more people. Restaurants are great, but we love being able to get the restaurant style food we love at home too.

Recently we stumbled upon a great Pad Thai recipe that keeps our Thai cravings to a minimum. It is a great and simple dish to make, and it can be fed to larger groups very easily. The best part about this recipe is that you can alter it to fit your family and their tastes. My husband loves Pad Thai but cannot stand having too many beansprouts, my kids favorite part is the shrimp and most restaurants only give one to two shrimp per person, and I love all the extra veggies. So when I make it at home I can make more of what we love.
