Summer Eats: Kansas City Barbecue Ribs

Summer is in full bloom. The kids are finally out of school, the weather is hot, and the pool is open. So it isn’t surprising that all of that fantastic summer barbecue food is out on the shelves at the grocery store and begging to be brought home and grilled. We love summer barbecues. Ribs are a HUGE favorite in our house. My husband makes them several times during the summer season. I love to have them with lots of sauce. So I love to baste them after they are grilled, and we even keep some extra sauce on hand for eating. But, we love trying new recipes. So of course when I saw this recipe for Kansas City Barbecue Ribs I knew we had to try it.

What you will need:

  • 1/4 cup packed brown sugar
  • 1 Tbsp. paprika
  • 1-1/2 tsp. each garlic powder and onion powder
  • 1 tsp. black pepper
  • 1/4 tsp. ground red pepper (cayenne)
  • 4 lb. pork spareribs, trimmed
  • 1 cup HEINZ BBQ Sauce Kansas City Sweet & Smoky

What you will do:

  • Heat grill to medium-high heat. Transfer ribs to grill.
  • Heat oven to 350ºF.
  • Combine sugar and seasonings; rub over ribs. Place on a foil-covered rimmed baking sheet sprayed with cooking spray.
  • Bake 1 hour.
  • Heat grill to medium-high heat. Transfer ribs to grill.
  • Grill 8 to 10 min. or until heated through, turning and brushing frequently with barbecue sauce.

Ribs are a great entree for summer barbecues and potlucks, so enjoy them all summer long with friends or at home with family.

Father’s Day Ideas: A Day For Dad

This year we are going old school at our house for Father’s Day. We are making it an all about Dad day. Starting with his favorite breakfast, breakfast burritos, a marathon of his favorite movies, and ending with a barbecue of his favorite dinner, ribs. We want you to be able to do the same thing or something similar with your Dad. What is your Dad’s favorite food? Is it an easy dish to make?

We are starting our day with breakfast burritos. We love this recipe from Better Homes and Gardens.

Chicken Breakfast Burritos

What You Will Need:

3 tablespoons butter
1 1/2 cups refrigerated shredded hash brown potatoes
2 cloves garlic, minced
1/4 teaspoon ground cumin
3/4 cup diced cooked chicken or ham, or crumbled, cooked pork sausage patties or links
6 eggs
1/3 cup milk
1/4 teaspoon salt
1/8 teaspoon ground black pepper
8 10 inches flour tortillas
1 4 ounce can diced green chile peppers, drained
1 1/4 cups shredded Colby and Monterey Jack cheese (5 ounces)
Red and/or green salsa

Now head over to BHG.com for the full recipe. We chose to use chorizo for our meat instead of chicken since it is a favorite for the Dad at our house. You can also try bacon, sausage, or beef.

Next on our agenda is a day of movies. We love super heroes here at our house. So we are doing an Iron Man movie marathon. Iron man 1-3. What’s your Dad’s favorite movie?

Finally we are ending our day with our favorite Rib recipe.

What You Will Need:

Rack of pork ribs
Roasting pan
2-4 cans of your favorite beer or soda
BBQ seasoning we love pork rubs
Aluminum foil
BBQ sauce

We braise our ribs, this way they fall off the bone when you eat them. Start by rubbing them with your favorite pork rub. Then place them in the roasting pan and pour the soda or beer so that the meat is fully covered by the liquid.
Cover the roasting pan with aluminum foil and place in oven at 250 degrees for one hour. After one hour flip the ribs over and cook for another hour.
Remove foil and dump juices. Now use a brush to cover your ribs with BBQ sauce. Place back in oven for another 15-20 minutes or toss on the grill for 15-20 minutes. Your ribs will be sweet, and fall right off the bone!
