Meals to Try: Hawaiian Chicken Kabobs

Summer is a great time to get outside and grill. The weather is great to be outside enjoying the outdoors, but it can also get really hot inside the house. Especially when you are cooking. So outdoor cooking is a relief to everyone. Cooking out can get monotonous, but grill meals don’t have to be boring. You can create more than just the average meal of burgers and dogs with a grill.

This month we want to share a fun and healthy outdoor grill meal that will wow everyone. Hawaiian Chicken Kabobs are a great addition to your summer grill list. Not only is it simple to create, it also combines healthy ingredients like fruit, veggies, and meat. Just follow this simple recipe to create this fantastic new dish. Do not be afraid to add in your favorite veggies!

What You Will Need:

  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup pineapple juice
  • 4 Tbsp olive oil, divided, plus more for brushing grill
  • 1 1/2 Tbsp rice vinegar
  • 4 garlic cloves, minced (4 tsp)
  • 1 Tbsp minced ginger
  • 1/2 Tsp sesame oil
  • Salt and freshly ground black pepper
  • 1 3/4 lb boneless, skinless chicken breast, chopped into 1 1/4-inch cubes
  • 3 cups (heaping) fresh cubed pineapple (about 3/4 of 3 lb pineapple)
  • 1 1/2 large green peppers, diced into 1 1/4-inch pieces
  • 1 large red onion, diced into 1 1/4-inch pieces

What You Will Do:

1. In a mixing bowl whisk together ketchup, brown sugar, soy sauce, pineapple juice, 2 Tbsp olive oil, rice vinegar, garlic, ginger and sesame oil. Stir in 3/4 Tsp pepper and season with salt if desired. Place chicken in a gallon size resealable bag. Reserve 1/2 cup of the marinade in the refrigerator then pour remaining marinade over chicken. 2. Seal bag and refrigerate 1 – 2 hours (meanwhile soak 10 wooden skewer sticks in water for 1 hour).

3. Preheat a grill over medium heat to 400 degrees. Meanwhile, drizzle remaining 2 Tbsp olive oil over red onion, bell pepper, and pineapple and toss. Season red onion and bell pepper with salt and pepper, then thread red onion, bell pepper, pineapple and chicken onto skewers until all of the chicken has been used. Brush grill grates with olive oil then place skewers on the grill.

4. Grill 5 minutes then brush along tops with 1/4 cup of remaining marinade. Rotate to opposite side and brush remaining 1/4 cup of the marinade on opposite side and allow to grill about 4 minutes longer, or until chicken registers, 165 degrees in the center on an instant read thermometer. Serve warm.

Summer Meals: Summer Sausage and Veggies

Summer is a great time for easy meals. It’s hot out, and we don’t want to spend a lot of time in the kitchen. Well this incredibly easy meal can be cooked inside or outside.

Summer Sausage and Veggies Packet Meal is a simple meal that can be tossed together in a simple foil packet for easy cleanup, easy prep, and easy eating! It contains some delicious summer veggies that are in easy supply right now, and are usually inexpensive during this time of year too!

What You Will Need:

Polish sausage, sliced

potatoes, sliced

zucchini, sliced

red pepper, sliced

red onion, sliced

salt and pepper, to taste

What You Will Do:

1. Place sliced Polish sausage, potatoes, zucchini, red pepper and red onion in aluminum foil. Season with salt and pepper to taste and seal shut.

2. Cook on the oven shelf of a grill at medium-high temperature for about 30 minutes. Or bake in a 400-degree oven for about 20 minutes.

Summer Meals: Pizza on the Grill

Summer tends to slow us down here at home, so instead of quick weeknight meals we sometimes get a little fancy. This week we wanted to share a fun and delicious meal we love during those hot summer months. We love to eat pizza, but in the summer when it can be 100 degrees + outside we hate to heat the house up by turning on the oven. So instead we take our pizza outside and toss it on the grill. Sounds a little crazy I know. But it works, and it is delicious. All you need us a few ingredients and a hot grill!

What You Will Need:

1 1/2 c. warm (105-115 degrees) water
1 Tbsp. sugar
1 Tbsp. yeast
1/2 tsp. salt
3-4 1/2 c. flour

Pizza sauce
Cheese
Your choice of toppings we chose:
Pepperoni
Tomatoes
Jalapeños (we have some spicy lovers in our house!)

What You Will Do:

1. Begin with the dough. In a large bowl, combine water, sugar, and yeast. Let stand for 10 minutes or until yeast is bubbly. Then add salt and stir. Now add 1 1/2 cups of flour and mix well. As it mixes you can add the rest of the flour a 1/2 cup at a time. When dough starts to pull away from the sides of the bowl you are done. Spray a glass or metal bowl with cooking spray then place dough in the bowl for it to rise. Let rise for 45 minutes or until doubled in size.

2. Heat your grill. Now roll dough, then spread oil with a brush on one side, place oil side down on hot grill. Close grill and let dough cook. Cook for about 5 minutes then flip. You want to see grill marks but do not burn it. Now spread your sauce on the grilled side, add your cheese and toppings. Let cook for about 3-5 minutes. Check the bottom of the crust. Once the bottom is done and the cheese is melted your pizza is done!

We love grilling our pizza in the summer months, especially since hot weather lasts a long time here and heating up the oven makes the house unbearably hot. We hope you like our grilled pizza too!
