Simple Dinners: BBQ Chicken Tostadas

We are back at school, back at sports, back at work. And I am back at being so busy and so crazy that I can barely get through my day let alone think about preparing a healthy and delicious dinner. Do all you other parents feel me? I have zero energy, zero ideas, and zero time.

My schedule has gone from laid back and easy to run, run, run. But as much as I hate being that busy I enjoy that my kids are in sports, at school, and in school groups that give them joy and teach them about the world. So I am going to suck it, buttercup — and find a way to make dinner happen.

If you are regular readers you will know that I like to think ahead. So I got out my planner and I searched Pinterest, Instagram, and Facebook and collected as many ideas as I could. This one was so much fun and so quick I decided to share it with all of you. BBQ Chicken Tostadas.

Now our household loves all things Mexican — tacos, burritos, enchiladas, etc. Since we do have some young ones that do not enjoy spicy foods, we tend to tone it down when things are really spicy. This fun recipe is not full of spices and is sweet enough that the kids love it.

Ingredients

  • 8 tostada shells or 8 corn tortillas
  • shredded chicken
  • 1 1/2 cups of your favorite barbecue sauce, divided
  • 2 cups shredded cheese
  • 3 green onions, very thinly sliced (optional)
